Ingredients ½ green pepper 3 lbs. beef stew meat cut into small chunks 4 large carrots 2 stalks of celery 1 onion 2 medium/large sweet potatoes (with or without the skin) 8 oz. tomato sauce 2 Tbsp. olive oil coconut aminos to taste 1 bay leaf
Meat Seasonings ½ tsp. salt ½ tsp. black pepper ¼ tsp. garlic salt ½ tsp “no-salt garlic and herb seasoning” (from Costco) ¼ tsp. Thyme 1 tablespoon fresh Savory herb (sometimes I can't find it. Its also okay without)
Directions Cut up meat, celery, carrots, onions, potatoes, and green peppers. Season the meat with meat seasonings. Put oil into a large pot and brown the meat. Then add aminos to taste, and add carrots, celery, sweet potatoes, green pepper, onion and bay leaf. Add 2 cups of water.
Cook covered until meat is tender, which is about 1 hour.
Then add 8 oz. tomato sauce and 1 cup of water. Cook uncovered for 10 minutes. Add salt and pepper to taste. Remove from flame, cover and let stand for 30 minutes.
